PIZZA TIME!


    So today was a very busy day in the Curtsinger household. We were on the go a lot today. This morning we had banana pancakes. The recipe is in an earlier post. We did not have lunch today because we were at my in laws house. After we finally made it home we decided tonight should definitely be a pizza night. So here's the recipe. 

Vegan Pita Pizza 
  • 1 Whole Wheat Pita ( makes one personal pizza) 
  • Spinach 
  • Daiya Cheese ( I used Mozzarella)
  • Home made pizza sauce
  • Chopped mushrooms
Preheat oven to 350 degrees. Place pita on cooking sheet. Spoon sauce on to pita as little or as much as you like. Add toppings and add your cheese. Bake at 350 till cheese is melted. And Enjoy!


Home Made Pizza Sauce ( Makes alot of sauce I use it for pasta )
  • 3 Tomatoes
  • 2 Sweet Peppers
  • 1/4 Onion 
  • 1 Clove Garlic
  • Italian Spices ( I use a spice blend)
  • Cilantro (optional)
  • Dash Chili Powder
  • 1 1/2 c water
To make the homemade pizza sauce I put tomatoes and peppers in baking dish and broil for five mins. As tomatoes and peppers broil I put the onion, garlic, and cilantro into a food processor. You could also use a blender. After tomatoes and peppers are done broiling I put them in to the food processor as well. I like my sauce chunky so I blend only a few seconds. It really just depends on your preference. After its to the right consistency I pour everything into a pot with water. I let mine cook down for 10 mins. When its done put in containers and store for rest of week.

STARVING!

How many of you guy's are vegan? My question for you guys is this, are you guys always hungry? Since I have started my vegan lifestyle I feel like I can not get full. Maybe I'm not eating enough protein or something. I have been drinking a lot of water so I don't think its thirst. If you guys have or have has this problem please comment and let me know what I should do.

On another note, I baked homemade buns today! It was actually quite fun to make. I used to make homemade bread all the time but after a while I just got to lazy to make it. The buns turned out great though. We used them for chickpea burgers.We ate them to fast so I did not get a chance to take a picture. Well I hope you guys are having a wonderful day!

Vegan Cinnamon Banana Pancakes Recipe

I found this recipe on allrecipes website. I made a few modifications just because I was not in the mood for plain pancakes. If you would like to check out the original go to www.allrecipes.com/recipe/191885/vegan-pancakes   So here is my recipe:

1 1/4 cups self rising flour
2 tablespoons of sugar ( you could use agave nectar)
A pinch of Baking Powder
1/2 teaspoon of salt
1 tablespoon of coconut oil
1 banana
tablespoon ground flax seeds
teaspoon of cinnamon ( Use more or less depending on how much you like)
1 cup organic soy milk
1/2 cup of water ( more or less depending on consistency of batter)

I combined all ingredients in a blender besides banana till it is at the right consistency. You may have to add more water if batter is to thick. After you the batter is thin add the banana to the blender and blend till smooth. After, heat your griddle or pan on medium heat and grease with coconut oil. Drop batter in circles on pan or griddle till its the size you want. Wait for the bubbles to start forming before you flip. Cook till done and enjoy! I garnished mine with strawberries and they turned out yummy.

I am sorry

I just want to start off by apologizing about not making any new blog posts. Shortly after my last post my husband and I had started eating meat again. So I did not find it relevant to update this blog. But we are back! We started our vegan diet today, well I mean lifestyle choice. I have to say I feel really good today. This morning we started with a green juice and a piece of toast. We also walked 1.5 miles today at the park. I am hoping we can stick to being vegan. So far we are doing good. I made black bean and chick pea burgers for lunch with a salad and then we had tacos for dinner. I hope you guys have a great day and I will try to post a couple of times a day!

Day 9

So I want to share what my husband and I had for dinner last night. Since we have not gone to the grocery store yet, we havent had alot of different food in the house. So dinner last night was kind of an expirament. So we had a few different veggies in the house. I used carrots, chick peas, green beans, onion,corn, and cauliflower.  I boiled the chick peas and mixed everything in a bowl. Now we dont have alot of seasonings in my house. So we had left over meat loaf seasoning from when we ate meat. It really turned out great. I also made mashed potatos with soymilk and garlic salt. We also had spinach with it. I love experimenting with food :) who says you cant have fun cooking!

Day 8

So my hubby and I are a week into our vegan journey. I am so excited. I have completely taken milk out of my life. My hubby still eats cheese and I am completely fine with that. He has done so good and I am very proud of him. So I have lost ten pounds so far! I am so excited! It is such a great day. I am finally getting my self esteem back. I am still very self concious of my body. I have had body issues for a long time. Even when I was skinnier I still felt very self concious. After I met my husband I gained atleast 40lbs. Which is alot of weight. Then I lost my job which made me gain even more weight. I was depressed all the time and never felt good enough.

I feel the best I have in years. I love my life, my marriage is getting better, and I feel like I am worth something. Im thinking about naming this  blog. The big girls journey to vegan. I hope who ever is reading this has a great day! If there is something going on in your life I hope you know things do get better! I have been at rock bottom.

Day 6

So far this week has been going really well. We have been eating vegetarian and vegan. We are slowly making our way to full vegan. It has been a very exciting week this week. We have been doing so well. We have both lost a few punds which is absolutely great! My hubby and I are not the skinnest people in the world. So this is very exciting for us. Our two cats really like veggies too. One likes to eat corn. Which is pretty weird. I will be trying to update the blog more frequently.  I have had a sprained ankle so its been kind of rough. If you have any great meals ideas I would love to hear them. I hope you guys have an amazing day!

Day One Continued

So after waking up late and hubby went to work. I made myself some breakfast. It consisted of ibuprofen ( I have a sprained ankle), oatmeal with almond milk, blackberries, and a banana. I use plain oatmeal the kind in the big containers. So, as I waited for my oatmeal to get ready I pulled out my mini crock pot. It makes enough for my hubby and I. I decided to make veggie soup. Now when I make soup  I throw a little bit of every veggie in the pot. :) I've always done that. Hopefully it makes a good dinner.

Day One

After watching a horrifying video of the meat industry my husband and I have decided to vegan. We are slowly working our way to being completely vegan. Today is the first day of being meat free.
